Beyond the highlights
The pages most visitors miss: small cities, regional dishes, festivals and obsessions from the full guide.

Tlayuda
The tlayuda is Oaxaca's giant griddled tortilla: a large, thin corn tortilla crisped on a comal and layered with asiento (pork lard), black beans, quesillo, cabbage, avocado and tasajo (dried beef) or chorizo.

Birria
Birria is Jalisco's slow-cooked meat stew: goat, beef or lamb braised for hours with dried chiles until it collapses, served in a bowl with its rich consome or as tacos dorados for dipping.

Mérida
Merida, the White City, is the Yucatan's elegant capital: limestone mansions, the Paseo de Montejo, and a food culture built on cochinita pibil and lime soup.

San Miguel de Allende
San Miguel de Allende is Mexico's prettiest small city and its most international: a UNESCO-listed colonial center of cobbled streets around the pink neo-Gothic Parroquia, with a large expatriate community and a serious food and art scene.

Day of the Dead
The Day of the Dead is Mexico's most famous celebration: families build ofrendas (altars) with marigolds, food and photos to welcome back the souls of the departed.

Cenotes
Cenotes are the Yucatan peninsula's signature: limestone sinkholes opening onto underground rivers, sacred to the Maya and perfect for swimming.
