Beyond the highlights
The pages most visitors miss: small cities, regional dishes, festivals and obsessions from the full guide.
Cou-Cou and Flying Fish
Cou-cou and flying fish is Barbados' national dish: a smooth cornmeal-and-okra porridge stirred with a stick until it pulls clean, served with flying fish steamed in a lime-and-pepper sauce.

Bridgetown
Bridgetown is Barbados' capital and a UNESCO World Heritage site: the historic Bridgetown and its Garrison, with the Careenage marina and the world's oldest rum still flowing at Mount Gay.

Junkanoo
Junkanoo is the Bahamas' great street parade: thousands of costumed revellers, goatskin drums, cowbells and whistles dancing through Bay Street from 2am on Boxing Day and New Year's Day.

Sancocho
Sancocho is the Dominican celebration stew: up to seven meats slow-cooked with yuca, plantain, yautía, corn and squash into a thick, hearty pot.

Rum & Distilleries
Barbados claims the oldest distillery (Mount Gay, 1703); Jamaica the funkiest; Puerto Rico the biggest; Cuba the most iconic.

Punta Cana
Punta Cana is the Caribbean's biggest all-inclusive machine: 60km of white sand from Uvero Alto to Cap Cana, lined with resorts.
