Beyond the highlights
The pages most visitors miss: small cities, regional dishes, festivals and obsessions from the full guide.

Tanjia
Tanjia is Marrakech's own dish: beef (or lamb) sealed in a clay urn with garlic, cumin and preserved lemon, then buried in the ashes of a hammam furnace for six to eight hours.

Harira
Harira is the soup of Ramadan: a thick tomato, lentil and chickpea soup, enriched with vermicelli and fresh herbs, that Moroccans eat at iftar to break the fast.

Meknès
Meknès was the capital of Sultan Moulay Ismail (reigned 1672 to 1727), who built it into an imperial city of palaces, granaries and stables on a scale to rival Versailles.

Ouarzazate
Ouarzazate is the door of the desert: the last real town before the Draa valley and the dunes, and Morocco's film capital.

Marathon des Sables
The Marathon des Sables is the 'toughest footrace on earth': about 250 km across the Sahara in six self-sufficient stages, in April heat.

Atlas Mountains
The Atlas runs the length of Morocco in three ranges: the High Atlas with North Africa's highest peaks, the Middle Atlas with its cedar forests and macaques, and the Anti-Atlas with its granite villages.
