Sancocho is the Dominican celebration stew: up to seven meats (beef, pork, chicken, goat, sausage) slow-cooked with yuca, plantain, yautía, corn and squash into a thick, hearty pot. It is the dish of rainy days, hangovers and family Sundays.

Every region has its version; the Cibao's is the most famous. It is always served with white rice, avocado and hot sauce on the side, and always in a crowd: sancocho is not a solo dish.
