Rfissa is chicken stewed with lentils, fenugreek and ras el hanout, served over shredded msemen flatbread that soaks up the broth. It is the traditional meal for new mothers (fenugreek is believed to restore strength) and a fixture of family celebrations.
The msemen is torn by hand into ribbons, the chicken and lentils are piled on top, and the broth is ladled over everything. It is eaten communally, like tagine.
