Soya is Cameroon's answer to suya: skewers of beef, chicken or goat, grilled over open flame and dusted with a spicy peanut-based seasoning.

Born in the north, it is now the country's great evening street food: the smoke of soya grills is the smell of Cameroonian nightlife from Garoua to Douala.

Key ingredients

  • Beef, chicken or goat, cut for skewers
  • Spicy peanut-based seasoning dust
  • Grilled over open flame

Where to try it

  • Evening grill spots in every city; Garoua and the northern cities for the original style.
  • Molyko (Buea) and Akwa (Douala) grill streets.
