Poisson Braise
Poisson Braise
Poisson braise is Cameroon's great evening street food: whole fish scored and marinated for hours in a ground spice paste, then grilled slowly over charcoal until the skin chars and the flesh stays juicy.
The flavor signature is the njansang-pebe-white-pepper marinade, distinct from grilled fish elsewhere in West Africa. It is served hot with fried or boiled plantains, bobolo, raw vegetables, hot pepper sauce and often mayonnaise.
