Miondo and Bobolo

Miondo and bobolo are fermented cassava sticks: cassava soaked, fermented and ground into a paste, wrapped in leaves and steamed until firm. Miondo is the thin stick, bobolo the larger, thicker one.

The fermentation gives a slightly sour taste. They are the neutral, low-fat base of Cameroonian eating: the standard accompaniment to ndole, poisson braise, roasted meats and soups, absorbing every sauce.
