Kilichi is spicy dried beef: thin sheets of beef sun-dried, coated in peanut paste and spices, and dried again. Ngaoundere is the production centre.

It keeps without refrigeration, which made it travellers' food long before it became a snack. It was presented as a candidate for OAPI geographical-indication certification in 2017, though the certified OAPI 'Kilichi' label belongs to Niger's Kilichi du Niger.
