Beignets-Haricot
Beignets-Haricot
Beignets-haricot is Cameroon's classic breakfast: soft, slightly sweet deep-fried puffs (puff puff) scooped into savory stewed beans.
The dough rises about two hours before frying to golden puffs; the beans simmer in a tomato, onion, garlic and ginger sauce with oil and crayfish until thick. Filling and cheap, it fuels the morning from market corners in every city.
