The Maine lobster roll is knuckle-and-claw meat, lightly dressed with mayonnaise (or served hot with butter, Connecticut style), piled into a split-top bun. The lobster should be the whole point; the dressing is a whisper.

Summer shacks from Kittery to Bar Harbor serve them dockside. The great debate is mayo vs. butter; Maine natives order it cold with mayo and judge accordingly.

Key ingredients

  • Fresh lobster meat
  • Mayonnaise (or melted butter)
  • Split-top bun
  • Lemon, chives optional
