Nashville hot chicken is fried chicken dunked in cayenne-spiked oil after frying, served on white bread with pickles to cut the heat. The heat levels run from 'southern' (no heat) to 'shut the cluck up'.
The origin story: Thornton Prince's girlfriend made him an extra-spicy fried chicken as revenge for a late night out in the 1930s; he liked it, and Prince's Hot Chicken Shack was born. It is now the city's defining dish.
