The cheesesteak is thin-sliced ribeye griddled with onions and melted cheese on a long Amoroso roll: 'wit' or 'witout' onions, and the cheese question (Cheez Whiz, provolone, or American) is the local theology.

Pat Olivieri invented it in 1930 at his South Philly hot-dog stand; Pat's and Geno's still face off across Passyunk Avenue 24 hours a day. It is eaten standing up, fast, preferably at 2 a.m.
