New Orleans Beignets

Beignets are square French doughnuts, fried puffy and buried under powdered sugar, served with chicory cafe au lait. Cafe du Monde has served them on Decatur Street since 1862, 24 hours a day.
They are eaten with the hands, the sugar gets everywhere, and that is the point. The classic order is three beignets and a cafe au lait, at the green-and-white tables under the awning.
