Guacamole is mashed avocado with lime, onion, cilantro and chile, traditionally ground in a molcajete (volcanic stone mortar). The Aztecs called it ahuacamolli; the name survives nearly unchanged.

Good guacamole is made to order and eaten immediately with totopos. Restaurants that prepare it tableside in the molcajete are worth seeking out.
