Elote is Mexican street corn: grilled or boiled corn on the cob slathered with mayonnaise, rolled in cotija cheese, dusted with chile powder and finished with lime. Esquites are the same flavours served in a cup, eaten with a spoon.
Elote carts appear on plazas and outside metro stations in the late afternoon. It is the definitive Mexican street snack.
