Cochinita pibil is Yucatan's pit-roasted pork: marinated in achiote and sour orange, wrapped in banana leaves and slow-cooked underground until it falls apart. It is the Sunday dish of the Yucatan, served in tacos or tortas with pickled red onion.
The pib (earth oven) is the ancient Maya cooking method; the Spanish pig and the achiote marinade completed the dish.
