Chilaquiles are Mexico's breakfast of champions: fried tortilla chips simmered briefly in red or green salsa until just softened, topped with crema, queso fresco, onion and often a fried egg or shredded chicken.

They are the classic morning-after food and the standard desayuno in fondas across the country. Divorciados come half red, half green.
