Greece; the yogurt meze

Tzatziki is the yogurt, cucumber and garlic dip that cools everything it touches. Strained Greek yogurt is mixed with grated cucumber (squeezed dry), garlic, olive oil and dill or mint.

It is eaten as a meze with bread, as the sauce in a pita gyros, and alongside grilled meats. The garlic should be present but not aggressive; the yogurt must be thick enough to stand a spoon in.

Key ingredients

  • Strained Greek yogurt
  • Grated cucumber, squeezed dry
  • Garlic, olive oil, dill or mint, a little vinegar or lemon

Where to try it

  • On every meze table in Greece.
  • Inside every pita gyros.
  • Tavernas serve it with warm pita as the opening move.
