Greece; the honey puffs

Loukoumades are the Greek honey puffs: spoonfuls of yeasted dough dropped into hot oil, fried golden, then drenched in honey and scattered with cinnamon and crushed walnuts. Crisp outside, airy inside, eaten hot.

They are street and festival food, sold from dedicated loukoumades shops and at panigiria (saints' day festivals). The classic topping is honey and cinnamon; modern shops add chocolate, ice cream and everything else.
