Mangú is the Dominican breakfast of record: green plantains boiled and mashed with butter and a little of the cooking water, topped with pickled red onions. The full order is los tres golpes, 'the three hits': fried Dominican salami, fried cheese and fried eggs alongside.
It is African in origin (the word likely from the Kikongo mangú), Dominican in execution. The onions must be quick-pickled in vinegar; the plantains must be green, never ripe.
