Conch (pronounced 'konk') is the Bahamas' defining seafood: the big sea snail whose sweet meat goes into fritters, salads, chowders and the cracked-conch main course. Conch fritters are the entry point: diced conch folded into a peppery batter and deep-fried golden.
Conch salad is the raw version: diced conch cured in lime and orange juice with onion, pepper and tomato, made to order at the dock. Cracked conch is the main event: tenderised, breaded and fried, served with peas n' rice.
