BeaverTails are fried dough pastries stretched by hand into the shape of a beaver's tail, then topped with cinnamon sugar or anything from chocolate hazelnut to maple. Crisp outside, chewy inside, eaten hot.
Grant and Pam Hooker created them in 1978; the ByWard Market stand in Ottawa made them famous. They are now the official pastry of the Rideau Canal skateway.
